Burger Buns

Hmmm this time I decided to make burgers from the scratch and after some research online I decided on this recipe from King Arthur Flour Website..I halved the original recipe as I did not want 8 buns and i really regret doing that ...these buns are so easy to make and they are so light and fluffy and tasty  that 8 buns are definitely not more for a family of 4 ;)

Well yes I wanted to make the burgers but these buns taste so good on their own that I could not resist to gobble it up while vegetables were getting pressure cooked, my little Arjun could not wait till the patties are done so I just smeared some butter and delicious homemade strawberry jam I had made the previous day.....awwww he was delighted :) and that reminds me of bun- butter-gulkand I use to eat during my schooldays :)
finally I made a patty with potatoes and green peas but I did not have any spreads and greens so it was more of a sandwich than a burger but my girl was fine with it and packed it for her lunch...
well I am just explaining why I am gonna make them again next week, but I will try to make it a little healthier this time with the whole wheat flour or at least 50:50 of APF & WWF
The total time taken is more than 3 hours but the actual work time is less than 15 mins.

Ingredients:
All purpose flour/ Maida-1&3/4 cup
Butter- 1 tbsp
Instant dry yeast-1/2 tbsp
Sugar-1/8 cup
Salt-1/2 tsp
Egg-1/2 ( I halved the recipe you see;) )
Water- 1/2 cup, lukewarm

For topping:
Milk-1 tbsp( you can use the other half of the egg by beating it well instead of milk)
Melted butter-1 tbsp
Few sesame seeds

Method:

  1. Mix flour, yeast, egg, sugar, salt, butter and knead the dough by adding warm water in your stand mixer  in low to medium speed for about 7 mins or by hand for 10 mins. I used a little less than 1/2 cup of water.

  2.  The dough should be soft and stretchy when done. Place it in a lightly greased bowl and let the dough rise until doubled, mine took 2 hours

  3. Gently deflate the dough and divide it into 4 equal parts or 6 if you want smaller size burgers and roll them into a smooth balls and place them on a greased tray leaving room between them to rise, lightly flatten them and let them rise for an hour
  4. Brush the risen buns with milk, sprinkle some sesame seeds and bake them for 15 to 18 mins in a pre heated oven at 180 c. It took me exactly 18 mins
  5. Brush the baked buns with melted butter, it gives the bun nice flavor and satiny finish
Note: if you are reducing the size of the buns then you reduce the baking time as well by a couple of minutes

    1. Thanks Anita..hav'nt tried eggless but I have read that you can replace egg with 1/4 th cup of curd and a pinch of baking soda..do let me know if you happen to try
