Mooli Ka Paratha/ Radish Paratha

This is the  easy, healthy and delicious way to feed radishes to my kids. If you want to enjoy healthy lunch or dinner when you are pressed for time then stuffed paratha is a great choice as it takes no more than 15 mins when you are serving it with curd and pickle and I think that is the best way to serve it!
And yeah this is my last post of the year 2013...Have a happy new year friends :)

Chocofills...cookies


Ingredients:
Flour- 1 &1/4 cup
Cocoa powder-1/4 cup
Baking soda-1/2 tsp
Salt-1/2 tsp
Butter-1/2 cup
Brown sugar-3/4 cup
Milk-1/4 cup
Vanilla extract-1 tsp
Chopped dark chocolate-1/2 cup or more

Method:
1) Sieve  flour, cocoa, baking soda and salt 3 times and keep it aside
2)Cream sugar and butter well, then add milk and vanilla and beat well then add the dry ingredients and beat until incorporated
3)Take a spoonful of mixture and roll into a ball. Make a depression in the centre and place  few chunks of chocolate. Cover and roll into a ball and flatten it. Place on a lined cookie sheet. Bake in a pre heated oven for about 12 – 15 minutes at 190 c. let them cool on a wire rack.

Kalmi Kebab


Ingredients:
Chicken Drumsticks-4
Hung curd-4 tbsp
Garam masala-1/4 tsp
Red chilli powder-1/2 to 1 tsp
Pepper powder-1/2 tsp
Fennel powder-1/4 tsp
Chat masala-1/4 tsp
Ginger-garlic paste -1 tsp
Lemon juice-1 tbsp
Oil-1 tbsp
Black salt-1/2 tsp
Salt-1/2 tsp or as per taste

Method:
1)Prepare marinade by mixing all the above ingredients, make incisions on the chicken and marinate for 6 to 8 hours( overnight for best results)
2) Grill the chicken on a charcoal grill( if you are lucky enough to possess one :) ) or in a pre heated oven for 30 to 40 mins or till done
3) Baste oil on the chicken after 10 mins and keep turning at regular intervals
4) Serve with yogurt mint chutney( grind together a cup of mint leaves, 2 green chilies, one small onion, 1 tsp of jeera and salt. Then add a cup of yogurt/curd and grind again)

Soursop/ Ram Phal Smoothie

Have you all heard of soursop or ram phal? Well, not me until my yoga instructor told us about it yesterday. Soursop can naturally kill cancer cells, it is 10,000 times stronger in slowing down the cancer cells than chemotherapy with no side effects such as hair fall and nausea. Unlike chemo it selectively kills the bad cells without harming the good cells. Please google about it to learn more about this amazing fruit and its benefits and share with your friends and family.
My instructor says you benefit from this fruit by just having it once in every six months.
Prevention is always better than cure right?
I bought this fruit from a fruits stall near Safina plaza, 400 Rs per kg...and made a smoothie..
Even if all this  is not true, there is nothing to lose, it's as delicious as banana smoothie...so go ahead and make some for you and your loved ones :)

Veg Pizza...Homemade from scratch with step by step pictures

This is the easiest, no fail pizza recipe..I have never gone back to the store bought pizza base after this and Moreover I made 3 medium sized, delicious pizzas in less than 150 Rs ..now isn't that a good reason to roll up the sleeves and head to the kitchen? ;)
This recipe is from veg recipes of India , I have tweaked it to my taste though

Gobi Manchurian



Ingredients:
Cauliflower- 1 medium sized
Maida-2 and 1/2 tbsp
Corn flour - 2 tbsp
Rice flour- 1 tbsp
Ginger- garlic paste- 1 tbsp
Salt

For sauce:
Oil-2 tbsp
Onion-1 medium, finely chopped
Capsicum-1, finely chopped
Garlic cloves- 10 to 15, finely chopped
Ginger paste- 1 tsp
Green chillies- 4, slit
Green chilli sauce-1 tbsp
Soy sauce- 1&1/2 tsp
Tomato sauce- 3 tbsp
Vinegar-2 tsp
Red chilli powder-1/2 tsp
Sugar-1/2 tsp
Spring onions-1/4 th cup, finely chopped
Salt

Method:
1) Cut the cauliflower into florets and place them in hot salted water for 10 mins and drain.
2) Make a thick paste of maida, corn flour , rice flour, ginger garlic paste and salt adding around 1/4 th cup of water, coat the florets in this batter and deep fry them till golden brown and keep it aside.
3) In a large pan, take oil, add onions and sauté for 2 minutes, then add chopped garlic, ginger paste, green chillies and sauté for 2 more minutes.
4) Now add capsicum and cook for 2 mins, let the capsicum be crunchy, do not overcook.
5) Now add green chilli sauce, soy sauce, tomato sauce, vinegar, sugar and 3 tbsps of water and cook for 2 minutes.
6) Finally add deep fried gobi sauté for 1 minute in high flame, garnish with spring onions and serve hot.

Simple egg fry


Ingredients:
4 boiled eggs
Garlic cloves-3( crushed)
Curry leaves-1 string
Mustard seeds-1/4 tsp
Turmeric powder- a pinch
Red chilli powder-1/4 tsp
Pepper powder-1/4 tsp
Salt

Method:
Make incisions on the boiled eggs, take  1 tsp of oil in a pan, add mustard seeds let it splutter, then add crushed garlic, curry leaves, eggs and the spices mentioned above and salt, fry for a couple of mins and turn off the flame.
Serve with rice and dal!

Almond and chocolate filled butter cookies


Ingredients:
Flour-2 cups
Butter-1cup
Sugar-5 tbsps
Milk-2 to 3 tbsps
Cinnamon powder-1/2 tsp
Vanilla extract-1/2 tsp


For filling:
1/2 cup ground almonds
1/3 cup vanilla sugar or 1/2 tsp vanilla extract plus 1/3 cup sugar
3 tbsps mini chocolate chips

Method:
1) Cream sugar butter in a stand mixer bowl, add cinnamon powder and vanilla extract and mix in low speed, now start adding flour little at a time and finally milk a tbsp at a time and mix till no traces of flour is found and till you get a smooth dough.
2) Mix all the ingredients listed under filling in a separate bowl and keep it aside
3)Divide the dough into ping pong ball size, flatten the dough and  place a spoon of filling and enclose it and roll into smooth ball...repeat the process with all the balls.
4) Bake them in a pre heated oven at 180c for 28 to 30 mins...cool them on wire rack. Store in an air tight container once completely cooled
