Pound Cake

This cake is  wonderfully rich, moist, buttery with a lovely brown crust. Traditionally this cake is made with a pound of each ingredients:flour, eggs, butter and sugar..hence the name pound cake but that makes one huge cake...as long as the ratio is preserved it is fine to reduce the quantity to make a cake of desired size. So any cake made with a ratio of 1:1:1:1 of flour, sugar, butter, eggs is a pound  cake.


Ingredients:

Cake flour: 1& 1/2 cup or 150 gms(check here to make your own cake flour)
Eggs:3(at room temp)
Butter:185 gms or 13 tbsp or 1/2 cup+1/3 cup( at room temp)
Granulated white sugar: 3/4 cup or 150 gms
Milk:3 tbsp
Vanilla extract:1&1/2 tsp
Baking powder:1 tsp
Salt:1/4tsp

Method:
  • Pre heat the oven to 180 c, grease a 9" loaf pan and line the bottom of the pan with parchment paper
  • In a bowl whisk together eggs, milk and vanilla extract
  • In a bowl of stand mixer, with paddle attachment or you can use hand mixer, mix together dry ingredients( flour, sugar, baking powder and salt) for 30 secs or until combined
  • Add butter and half of the egg mixture and mix on low speed until the dry ingredients are moistened and then increase the speed to medium and beat for about 1 minute to aerate and develop the cake structure
  • Scrape down the batter and add the remaining egg mixture in 2 additions beating for 30 secs after each addition to incorporate the egg and to strengthen the cake structure
  • Scrape down the batter into prepared pan and smooth the top with the back of the spoon and bake for about 55 to 65 mins or unil tooth pick inserted comes out clean. Mine took 60 mins
  • If you find the cake browning too much as it bakes, cover with a piece of lightly buttered aluminium foil after 30 mins
  • Cool it on wire rack for 10 mins and remove from pan and cool it on wire rack completely
