Boodida Gummadikaya Halwa/ Ash Gourd Halwa

Happy New Year!
Here is the traditional andhra dessert which I die for...so lets start the new year on a sweet note :)



Ingredients:
  1. Ash Gourd( grated)- 3 cups
  2. Sugar -   1 cup
  3. Cashews and raisins-1/2 cup
  4. Ghee -1/4 cup
  5. Cardamom-2

Method: 
  1.  Cut the ash gourd to big chunks ,discard the seeds and remove the skin.Grate the ash gourd ,squeeze the excess water . ( I used this water to prepare chapathi dough :) )
  2.  Heat half tbsp ghee in a pan ,add dry fruits and fry in medium flame till they turn golden brown and keep them aside
  3.  Heat 2 tbsp ghee in the same pan,add the grated squeezed ash gourd and fry in low flame ,cover and cook till all the water evaporates
  4.  Add the sugar( you can increase or decrease the sugar as per your taste) and increase the flame to medium and stir continuously and then add the remaining ghee spoon by spoon and cook until the mixture starts to leave the sides of the pan. 
  5.  Add the cardamom powder, and fried cashews and raisins, mix and serve warm.
